Sheep’s cheese cake

INGREDIENTS
- 525 gr of cream
- 5 eggs
- 200 gr of butter
- 70 gr flour
- 600 gr of sugar
- 1 orange
- 100 gr almond flour
- 100 g brown sugar
- 1150 g cream cheese or sheep’s cottage cheese
- 100 g loose flour
- 300 gr of red fruits
- 300 watermelon biscuits
Cooking settings
Cream cheese
- Mode: Mixed
- Temperature: 165ºC
- Humidity: 20%.
- Time: 33 minutes
Almond soil
- Mode: Convection
- Temperature: 150ºC
- Humidity: 0%.
- Time: 15 minutes
Orange roof tile
- Mode: Convection
- Temperature: 180ºC
- Humidity: 0%.
- Time: 5 minutes
PREPARATION:
Base
Crush the maría biscuits and gradually add the butter and cognac until you get an irregular dough that comes off easily from your hands. Set aside.
Cream cheese
Place the cream cheese or cottage cheese, sugar, cream and eggs in a bowl, crush everything until smooth.
Place the base of the cake in a mould and add the cream cheese on top. Preheat the mixed mychef oven to 165 ºC in mixed mode (20% humidity). Insert the cake and leave to cook for 33 minutes.
Land of almonds
Put 100 gr. of butter, almond flour, brown sugar and loose flour in a bowl, mix until you get a regular dough. Then spread between two silpat and bake in the compact mychef oven at 150ºC for 15 minutes in convection mode.
Once the paste has cooled, grind until a rich almond earth is obtained.
Orange roof tile
Remove the peels from the oranges and chop them in fine julienne, then cook the peels with the orange juice until they become tender and the juice has been reduced. Then mix with 100 gr of butter, 70 gr of flour and 250 gr of sugar until you get a fine and homogeneous dough, which we place in a pastry bag to spread on silpat with the help of a spatula. Heat the oven to 180 ºC to bake for 5 minutes. After this time, leave to cool and set aside.
Red fruit soup
Bring the red fruits to the boil with 10 ml lemon juice, 80 g sugar and 140 ml water. Leave to cook until a firmer texture is obtained, reserve in the chamber.
PLATING:
Place the almond earth on the base, place a piece of the cheesecake on it, place the red fruit soup on one side, the orange crisp on top and the raspberry and modena vinegar ice cream on top (free choice ice cream).
